Diet quality significantly influences affective symptom burden, yet the impact of specific food groups remains unclear. We analyzed dietary patterns and psychological symptoms in 479 adults aged 20–91 using food-frequency questionnaires alongside validated measures of fatigue, depression, and perceived stress. Principal component analysis identified three dietary patterns – Processed, Wholesome, and Carnivorous – which were related to psychological outcomes via structural equation modeling controlling for age. Greater adherence to the Processed pattern, characterized by sweets and sugar-sweetened beverages, was associated with higher fatigue, depressive symptoms, and stress. Conversely, the Wholesome pattern, rich in leafy greens, cruciferous vegetables, and berries, predicted lower symptom levels. The Carnivorous pattern showed minimal association. Notably, high adherence to the Wholesome diet attenuated the stress linked to processed food intake. These findings suggest that processed dietary patterns were associated with higher symptom burden, whereas plant-rich patterns were associated with lower symptom burden.
